Loaded Potato Salad

Ingredients:

-3 large potatoes

-3 eggs

-1 stalk celery, diced

-1 small onion, diced

-2/3 cup mayonnaise

-1 tablespoon cider vinegar

-1/2 teaspoon salt

-1/4 teaspoon pepper

-1 tablespoon olive oil

Instructions:

1. Fill a large pot with water and bring to a boil. Add potatoes, reduce heat, and simmer for 20-25 minutes or until potatoes are tender.

2. While potatoes are cooking, bring a small pot of water to a boil. Add in eggs and simmer for 10 minutes. Remove eggs and run cold water over them until cool enough to handle. Peel and chop eggs.

3. Heat olive oil in a large skillet over medium-high heat. Add diced celery and onion and sauté until softened, about 5 minutes.

4. Drain potatoes and allow to cool before chopping into cubes.

5. In a large bowl, combine potatoes, eggs, celery and onion.

6. In a small bowl, mix together mayonnaise, cider vinegar, salt and pepper.

7. Pour mayonnaise mixture over potato mixture and toss to combine.

Serve immediately or cover and chill until ready to serve. Enjoy!

Vanilla Cream Cheese Cupcakes

Ingredients:

-1 cup all-purpose flour

-1 teaspoon baking powder

-1/4 teaspoon salt

-1/2 cup butter (at room temperature)

-1 cup sugar

-2 eggs

-1 teaspoon vanilla extract

-1/2 cup cream cheese (at room temperature)

-2 tablespoons olive oil

-Assorted dried spices (cinnamon, nutmeg, etc.) and seasonings

Instructions:

1. Preheat the oven to 350°F and line a cupcake pan with cupcake liners.

2. In a medium bowl, whisk together the flour, baking powder, and salt and set aside.

3. In a large bowl, beat together the butter and sugar until light and fluffy.

4. Beat in the eggs, one at a time, followed by the vanilla extract.

5. Slowly mix in the cream cheese until fully combined.

6. Slowly add in the flour mixture and mix until just combined.

7. Add the olive oil and mix until combined.

8. Scoop the batter into each cupcake liner and sprinkle the tops with the dried spices and seasonings.

9. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Apple Cinnamon Crumble

Ingredients:

- 4 apples, peeled, cored and diced

- 1/2 cup sugar

- 2 tablespoons all-purpose flour

- 2 tablespoons butter, melted

- 1 teaspoon ground cinnamon

- 1/4 teaspoon ground nutmeg

- pinch of salt

- 1 tablespoon olive oil

Instructions:

1. Preheat oven to 350 degrees F.

2. In a large bowl, combine the diced apples, sugar, flour, cinnamon, nutmeg and salt. Toss to coat the apples.

3. In a separate bowl, mix together the melted butter and olive oil.

5. Bake for 40 minutes or until the apples are tender and the topping is golden brown.

6. Serve warm with a dollop of whipped cream, if desired. Enjoy!
