Recipe: Sun-Dried Tomato and Chicken Pasta
Ingredients:
- 1 pound chicken breast, cut into bite-sized pieces
- 3 eggs
- 1 cup butter
- 1 onion, diced
- 1/2 cup sun-dried tomatoes, chopped
- 2 tablespoons olive oil
- 2 tablespoons oyster sauce
- Salt and pepper, to taste
Instructions:
1. In a large pot, bring water to a boil and cook pasta according to package instructions. Drain and set aside.
2. In a separate skillet, heat olive oil over medium heat.
3. Add diced onion to the skillet and sauté until translucent, about 2-3 minutes.
4. Add chicken pieces to the skillet and cook until they are no longer pink in the center, around 5-7 minutes.
5. Season the chicken with salt and pepper to taste.
6. Push the chicken and onion mixture to one side of the skillet and melt butter on the other side.
7. Crack the eggs into the melted butter and scramble them until fully cooked.
8. Once the eggs are cooked, mix them with the chicken and onion mixture.
9. Add chopped sun-dried tomatoes to the skillet and stir to combine.
10. Pour in oyster sauce and stir well to coat all the ingredients.
11. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
12. Serve the sun-dried tomato and chicken mixture over the cooked pasta.
13. Garnish with additional chopped sun-dried tomatoes, if desired.
