Ingredients

• High heat cooking oil- 3 tablespoons (45 grams) unsalted butter

• 1/2 cup50 grams) Parmigiano-Reggiano, grated
• 1 12 cups (150 grams)ecorino Romano, grated
• 4 egg yol
• Freshly chopped parsley and extra Parmig-Reggiano for garnish

Directions:

1. For pasta: In a medium saut pan or a large deep, add linguine, cherry tomatoes, yellow onion, garlic, red pepper flakes, oil, and water. Season gently with salt and bring to a boil over medium heat. Cook for 9 minutes, turning the pasta with tongs as needed, until the pasta is al dente and the water is nearly evaporated.
2. Stir torn and garnish with fresh Parmesan Reggiano, black pepper, and a touch extra virgin olive oil.

1. For pasta two: chicken breasts with salt and pepper. Heat high heat cooking in a large deep sauté pan or skillet over medium-high heat. Sear in batches until browned and just cooked through, about 2-3 minutes per side Remove from pan and set aside.
2. Reduce heat to medium and add unsalted to the pan. Once melted and bub, sauté shallot, garlic, and tomato softened and fragrant. Add Cajun seasoning and sauté for another30 seconds.
3. Add rigatoni and water, turn the heat up to-high and bring a boil. Reduce the heat to medium, cover with a, and allow to cook for 5 minutes.
4. Remove lid and add heavy cream. Bring to a boil over medium heat then reduce the heat to low and simmer for 5-8 more minutes, or until the pasta is cooked dente and the sauce has reduced.
5. Cut chicken cubes and back to the pan along with lemon juice. Stir in Parmesan Reggiano until and emulsified into the sauce. Garnish with fresh parsley extra grated Parmesan Regiano.
